-Dumpling freezer was at - 4.0 C. It should be maintained at -18 C. Food removed and defrosted during the inspection. Check afterwards to ensure that it reached -18 C and adjust if necessary. Temperature records were up to date. All coolers were < 4 C. No evidence of pests. Pest control records reviewed. General sanitation was satisfactory.
