Observation: Upright cooler was between 4.6 to 6 degrees C in the bakery.
Corrective Action(s): Do not store any potentially hazardous food inside this cooler until it is maintained at or below 4 degrees C/40 degrees F. Adjust/re-service/replace the cooler to maintain it at or below 4 degrees C; Correct within 2 days and contact the district E.H.O. for a follow up inspection.

Observation: Three light covers are missing in the deli food prep./storage area.

Comments

Bakery:
-Only pre-packaged baked goods were being sold. Food preparation was not occurring at the time of the inspection.
-Hand-sink was supplied with liquid soap, hot and cold running water, and paper towels.
-Ware-washing sinks were operational and equipped with a drain plug.
-Previous floor tiles has been replaced with epoxy flooring.
-Front display coolers have been replaced with upgraded coolers.
-Walk-in-cooler, cake display coolers (apart from the upright cake cooler), three bakery display coolers, and two prep. coolers were at or below 4 degrees C / 40 degrees F.
-Walk-in-freezer and prep. freezers were at or below -18 degrees C / 0 degrees F. Ice build-up was not evident in the walk-in-freezer.
-Hot-holding unit was preheated to above 60 degrees C.
-A probe thermometer was available.
-No signs of recent pest activity were noted.
-200 ppm QUATS sanitizer was available in the bucket with wiping cloths and from the dispenser.
-Racks and proofer were in a clean condition.

Deli:
-Hand-sink was adequately supplied with liquid soap, hot and cold running water, and paper towels.
-Warewashing sinks were operational and equipped with a drain plug.
-Floor tiles were replaced with epoxy flooring.
-Premises was free of construction debris.
-A hot holding unit was added which was at or above 60 degrees C.
-Display coolers were upgraded.
-Upright coolers, prep. cooler, and display reach-in cooler were at or below 4 degrees C.
-Walk-in-freezer was at or below -18 degrees C.
-No signs of recent pest activity were observed.
-200 ppm QUATS sanitizer was available from the bucket and dispenser.
*Obtain a second probe thermometer for the deli.

Pest control report from Ecolab dated November 24, 2017 was available for T&T.
Note: Pest control report from Ecolab dated November 3, 2017 for the Food Court.

*Food preparation can be conducted at the bakery and deli again as the renovations are complete as long as the food service establishment continues to comply with the Food Premises Regulation under the Public Health Act.

A follow up inspection will be conducted to check that the above noted violations have been corrected and to check food temperatures once the bakery and deli are in operation again.
