Reviewed handwashing / glove use procedures.

Cooling records properly maintained for chicken broth cooked onsite.
Cooking line ingredients in use - food inserts kept on ice when outside of cooler units.
Ensure deliveries of food items are located within cooler / freezer units upon receipt.
Cardboard sheeting removed from shelving and counters.
Front prep right undercounter cooler 3 C, left undercounter cooler 3 C
Sanitation has improved, fruit fly activity reduced. Ensure sanitation is maintained on a daily basis to prevent pest activity.
Use of oversized cooking pots has discontinued. Ensure remaining oversized pots are removed from the premise.

Large batch advanced cooking of soup broths onsite is discontinued. Food products are now prepared at central kitchen facilities.
