Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Diswasher final rinse temperature registered 55, 47 and 46 degrees C during three consecutive runs.
Correction: Repair or service the dishwasher so that it reaches at least 71 C at the plate surface or 82 C/180 F at the temperature guage.
Until then all dishes must be sanitized manually. (Immediatel).

Observation: Final rinse temperature in the dishwasher reached 54 C at the plate surface.
Correction: Repair or adjust the dishwasher so that it reaches at least 71 C at the plate suface during final sanitizing rinse.(immediately).
Comments

Follow up inspection.
Cockroach activity is under control compared to previous inspection.
The kitchen was not in use at the time of inspection. A big notice has been displayed in the kitchen prohibiting the use of
kitchen facilities due to the use of pesticides to control cockroaches.

The upright cooler registered 12 C at the time of inspection. Discard all food products and do not use this cooler
unless it is repaired or replaced and maintains 4 C or below.

Continue using glue traps in possible harborage areas for cockroaches.
Replace the baseboards underneath all cabinets and centre island with solid wood baseboards.
Ensure to seal the junctions between baseboards and floor with silicone.
Remove any soiled dishes or utensils as these could attract cockroaches.
All dishes and utensils must be washed and sanitized through the dishwasher prior to reusing them.
All cabinets, countertops and shelving must be cleaned and sanitized before re-opening the ktichen.
Continue getting pest control inspections from the licensed pest control provider.
Upright freezer must be on wheels.
Identify any cracks or gaps/holes in the walls or cabinetry and seal or patch those gaps to prevent harborage of pests.
