Walk in cooler at 2 degrees C.
Under counter (kitchen) cooler at 1 degree C.
Preparation cooler at 3 degrees C (above and below).
Under counter (front area) cooler at 1 degree C.
Chest freezer at -20 degrees C.
Upright freezer at -19 degrees C.
Hot holding internal temperatures at 60 degrees C or more.
Coolers equipped with thermometers.
Hand washing sinks are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
Bleach water sanitizer is available in labeled spray bottles in front and back areas at 100 to 200 ppm chlorine. Chlorine test strips on site.
High temperature dishwasher measured 78 degrees C at the utensil surface (minimum requirement: 71 degrees C at the utensil surface).
Three compartment sink supplied with sink plugs and hot and cold running water.
Ice machine in sanitary condition. Scoop stored in container located outside of machine.
