Observation (CORRECTED DURING INSPECTION): The dishwasher was not able to sanitize dishes @ 50ppm Cl or higher.
Corrective Action(s): Do not use the unit until the unit is repaired and re-inspection conducted by the health inspector. Use the second compartment of the dishwashing sink to sanitize the clean dishes as a last step. A 2-comp cleaning method handout was given to the staff to follow.

Observation: Noted food debris under the two prep coolers where the shave ice topping are stored.
Corrective Action(s): Dailiy cleaning is required at the end of each day to prevent pest attraction. Pull out the units and sweep/swipe the floor daily.
Follow the cleaning schedule in the sanitation plan.

Observation: Low temperature dishwasher was not working properly to sanitize dishes at 50ppm Cl or higher.
Corrective Action(s): Chlorine level was detect at the dish surface @ 10ppm Cl.
Noted air bubbles along the hose feeding the chlorine sanitizer.
Repair the unit immediately. Technician was called during inspection.
Use the second compartment of the dishwashing sink to sanitize dishes again @ 100ppm Cl solution.
Re-inspection is required prior to use the dishwasher again.
