A routine inspection was conducted, the following observations were found:
- Coolers 4C or colder; freezers -18C or colder; thermometers present; and temperatures monitored daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Sanitizer solution in spray bottles had [Cl2] of 200ppm. Test strips present and used. Ensure the sanitizing solution is discarded after 3 days as the strength decreases over time and exposure to light and temperature variations.
- Start storing wiping cloths in a bucket of sanitizer when not in use. This will kill any bacteria that has been picked up. Ensure the sanitizing solution in the bucket is changed every 3-4 hours or the strength remains at 200ppm.
- Floor has been resealed. It is sealed, durable, cleanable, and impervious to water.
- The two storage rooms and the areas by the back 3-comp. sink have been de-cluttered and cleaned. Great job.
- All foods stored in food grade containers; covered; date coded; labeled; stored in groups to minimize contamination; and 6" off the floor on shelves or pallets.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Improvement seen in all areas of the facility.
- No signs of pests. Orkin Pest Control is contracted monthly for monitoring. Reviewed reports, all in order.

**Review the proper use of disposable gloves. Gloves shall be changed when changing a task. Hands SHALL be washed properly before putting on new gloves.**
