General Comments:
Coolers are below 4 degrees C.
Freezers are below -18 degrees C. CHECK DEFROST CYCLE TIMES AND ENSURE THAT THE WALK-IN FREEZER TEMPERATURE IS -18 DEG C OR BELOW OUTSIDE OF THESE TIMES.
Soup was being hot held at 70 degC.
Dishwasher rinse is 72 degrees C at plate level.
200 ppm Quats is available for sanitizing.
Hand sinks are fully equipped. PLACE PAPER TOWELS INSIDE THE DISPENSERS AS DISCUSSED.
Temperature logs are being maintained.
