Routine inspection
- Hand washing stations are supplied with hot/cold running water, liquid soap and paper towels in dispenser. Hand sanitizer dispensers noted.
- Coleslaw and corn cups in Front counter cooler measured at 4C or colder.
- Walk-in cooler measured at 4C or colder. Raw chicken noted stored in labeled containers in walk-in cooler. Cooked chicken separated from raw properly and covered.Food in line and prep coolers measured at or below 4C. Upright freezer measured at -18C or colder. Temperature monitoring log kept updated.
- Hot holding units maintained temperature at or above 60C.
- Dishwasher registered at 74 C on dish surface. 2-compartment sink maintained.
- Sanitizer QUAT measured @200-400 ppm available in dispenser. QUAT sanitizer available in sani buckets and spray bottles. Test strip noted. Wiping cloths in kitchen and cook line are to be stored in the QUAT sani buckets.
- Floor is clean and free of build-ups. Please maintain floor free of food debris under equipment.
- No pest activity noted at this date. Pest is managed by a pest control company.
- General sanitation is excellent. Customer washroom maintained. Thank you!
