Observation: 1. Cardboard lining the bottom shelf in walk in cooler
2. Cardboard covered with plastic is covering the table beside the frying station
3. Rice scoop being stored in room temperature water
4. Knives are being stored in knife holder which is enclosed (hard to wash/sanitize)
Corrective Action(s): 1. Remove cardboard from walk in cooler
2. Remove cardboard beside frying station
3. Rice scoop should be stored in ways discussed in "storage of in-use utensils" info share (provided). Operator to store in clean bowl and sanitize the scoop and bowl atleast every 4 hours.
4. Install metal knife holder along wall as discussed.
