Observation: During time of inspection, chlorine sanitizer was >200ppm chlorine residual.
Chlorine sanitizer did not appear to be diluted
Corrective Action(s): Chlorine sanitizer solution must be at 200ppm in spray bottles
100ppm chlorine concentration in buckets.
Concentration of bleach directly from container is approximately 50,000 ppm !
- Operator corrected during time of inspection
-Ensure that chlorine sanitizer solution used to disinfect food contact surfaces is at 200ppm chlorine sanitizer - spray bottles, 100ppm chlorine concentration in buckets (with cloths stored within)

Observation: During time of inspection, the following was observed:
1. Moderate accumulation of droppings underneath warming drawer (on floor) of domestic oven
2. Some accumulation in corner of walk-in cooler on main floor
3. Moderate accumulation in corner (close to balcony) on 2nd floor where walk-in freezer is
Corrective Action(s): - ALL THIS MUST BE CLEANED AND AREAS SANITIZED
- Operator must employ stronger pest control measures, ensure monitoring traps are available throughout facility, especially at potential entry points
- Do not use poison traps

Routine inspection conducted.
- Backsplash has been replaced at 2 compartment sink - maintained in good repair and sanitary condition

- Handwashing stations equipped with hot/cold running water, liquid soap and paper towels
- All temperatures meet health requirements:
* Walk in freezer at -10C
* Walk in cooler at 4C
* Display cooler at 4C
* Walk in freezer (upstairs) at -3C (storing cakes)
* Upright stainless freezer at -14C
- Bleach solution available in 2 compartment sink, concentration at least 200ppm
- Sink plug available for 2 compartment sink
- Most foods stored at least 6" off the floor
- Most foods covered to protect from contamination, ensure to continue this practice for ALL food products

* EHO WILL EMAIL Food Safety Plan + Sanitation Plan RESOURCES AGAIN.
* Environmental Health Officer discussed Foodsafe online refresher course
