Observation:
Low temperature dishwasher is not sanitizing dishes properly. 0 ppm chlorine detected at the time of inspection.
Corrective Action(s):
Service dishwasher so that a chlorine residual of 50 ppm is detected on dishes after running through the dishwasher. To be corrected by August 1, 2018.

Routine Inspection:

Kitchen:
Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- All coolers maintained at or below 4 degrees Celsius.
- All freezers maintained at -18 degrees Celsius.
- Hot holding maintained above 60 degrees Celsius.
General food storage practices good:
- All food items stored off the floor.
- All food items covered and protected from contamination.
QUAT sanitizer in spray bottle = 200 ppm.
NOTE: proper thawing methods observed at the time of inspection.
- Sealed packaged of frozen meats were being thawed under cold running water - good.
Ice machine clean.
Dry storage room clean and organized.
Ventilation canopy sanitary at the time of inspection.

Bar:
Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
Coolers maintained below 4 degrees Celsius.
Glass washer sanitizing with 25 ppm iodine at dish level.
QUAT sanitizer in spray bottle = 200 ppm.
Sanitation and maintenance of bar area satisfactory.

Overall:
No signs of pest activity at the time of inspection.
General sanitation good at the time of inspection.
Premises well lit.
NOTE: Hole in wall under dishwashing sink is now covered with a metal sheet.
