Observation: 1. Two open cans containing mango pulp were observed in the preparation coolers.
2. Pieces of foil and tape observed on interior surface of ventilation canopy.
Corrective Action(s): 1. CORRECTED. The contents of the can that was recently opened were transferred to a food grade container with a lid. The other can containing mango pulp was discarded as there was discolouration on the inside of the can.
Ensure all canned foods, once opened, are immediately transferred to an appropriate food grade container with a lid.
2. It was stated that foil and tape were placed onto ventilation canopy to prevent leakage onto surfaces below, but issue has now been resolved. Ensure that all foil and tape are removed as pieces may potentially fall onto food or equipment below. Date to be corrected by: Today.
