Observation: House flies observed in the deli and bakery at the time of inspection. Also, UV lighting unit requires cleaning and maintenance to remove dead flies.
Corrective Action(s): Ensure to implement stronger measures to manage fly issues. Increase frequency of clean up and sanitizing surfaces. Ensure no pooling water on the floor or behind equipment. Also clean and maintain hard to reach areas to remove build-ups and eliminate fly breeding grounds.

Routine inspection
- Hand washing stations supplied with liquid soap and paper towels.
- All coolers are at or below 4C. Temperature monitoring kept updated.
- High temp dishwasher registered at 73C at the dish surface
- General sanitation is satisfactory.
- Counters and cutting boards sanitized frequently. Sanitizer QUAT measured at 200ppm concentration in sani bucket. Meat slicer observed being clean and sanitized. Proper procedure followed.
- Walk in cooler at deli is measured at or below 4C. Walk in freezer at deli section measured at or below -18C
- Hot holding units for soup (3) measured at or above 60C. Ensure to monitor every 2 hours.
- Hand washing and proper use of gloves are to be followed.
