Observation (CORRECTED DURING INSPECTION): Potentially hazardous food (dairy dessert, rasmali) observed stored at room temperature and measured at 20C. Staff mentioned that the food was previously served and voluntarily discarded the food during time of inspection.
Corrective Action(s): Ensure all previously served food is discarded immediately to prevent serving contaminated food and to prevent foodborne illness.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION):
1. Ice cream scoop observed in still water in container. Operator removed the scoop during time of inspection and placed it in an ice bath.
2. Clean pans observed stored directly on the floor in the diswashing area. Staff placed the pans in the dishwasher during time of inspection to be cleaned and sanitized.
Corrective Action(s): Ensure all equipment is cleaned and sanitized after each use. For utensils which are used throughout the day, ensure they are kept in an ice bath (or as per food safety plan) to prevent cross-contamination.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
1. QUATS sanitizer solution not prepared upon arrival to inspection. Staff prepared QUATS sanitizer for food contact surfaces during time of inspection which measured at 200 ppm QUATS concentration.
2. Knives observed on knife magnet above 2-compartment sink with dried up food debris. Staff cleaned and sanitized the knives during time of inspection.
Corrective Action(s): Ensure sanitizer solution is always prepared and changed frequently to measure at 200 ppm QUATS concentration in order to adequately disinfect all food contact surfaces throughout the day. Ensure all utensils are washed and sanitized after each use to prevent contamination and foodborne illness.

Observation (CORRECTED DURING INSPECTION):
1. Handsink in cooking line observed obstructed with plastic boxes/containers.
2. Handsink in prep area also osberved obstructed with drink disposal bin and a box of cups. Handsink in prep area not equipped with liquid soap or paper towel. Operator removed the obstructions and supplied the handwashing station with liquid soap and paper towel during time of inspection.
Corrective Action(s): Ensure all hand washing stations are always kept unobstructed to promote adequate handwashing frequency. Ensure all handwashing stations are equipped with liquid soap, paper towel, hot and cold running water to promote proper handwashing technique and to prevent cross-contamination.

Observation (CORRECTED DURING INSPECTION):
1. Foods in sandwich cooler top inserts observed double-stacked on top of one another. Containers placed directly on top of ready-to-eat foods. Staff removed the double-stacked containers during inspection.
2. Foods in sandwich cooler (bottom) observed uncovered. Staff covered the foods during time of inspection
Corrective Action(s): Ensure all foods are covered with food grade material and foods containers are not directly placed on top of foods to prevent risk of contamination and foodborne illness.

Observations:

1. Temperatures:
- Walk-in cooler at 0C
- Walk-in freezer at -18C
- Undercounter 2-door glass cooler at 3C
- Sandwich cooler at 3C (bottom) and 4C (top)
- Hot-holding unit measured at >60C
- Hot-held rice measured at 65C

2. Sanitation:
- General sanitation of premises satisfactory except above noted violations
- Handwashing station in staff washroom and at bar adequately supplied with soap, paper towel, hot and cold running water
- QUATS solution measured at 200 ppm with test strip
- Chemical dishwasher measured at 100 ppm chlorine residual with test strip
- 2-compartment sink available with drain plugs
- Iodine glasswasher at bar measure at 12.5 ppm iodine concentration with test strip
- Ventilation hood observed in sanitary condition (last serviced Sept 20, 2021)
- Ice machine kept in sanitary condition

3. Pests:
- No signs of pests during time of inspection
- Pest control company contracted to conduct inspections

4. Storage:
- All foods stored at least 6 inches off the floor
- Ready-to-eat foods stored separately from raw foods (meats) in walk-in cooler
- Dry storage area kept in sanitary manner
