Observation: Weather stripping for bay door has been replaced, however strip for side of bay door still needs to be replaced.
Corrective Action(s): Hole temporarly sealed with steel wool. Ensure bay door is properly and permanently sealed.

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: - Large dough equipment (mixers, dividers) require thorough cleaning and sanitizing. Old bits of dough and flour accumulation observed on and in parts of machines.
- Previously cleaned and sanitized utensils were stored in a dirty container.
Correction: - Food contact surfaces of dough machines must be thoroughly cleaned and sanitized after each use.
- Clean equipment/utensils must be stored in clean receptacles.

Comments

- A professional pest control company contract has been established; pest control services to be provided twice a month. 9 tin cats were set up inside facility, 3 bait stations set up outside of facility.
- Shelves for proofing cabinets are now properly stored off the floor
- Dough machines including bases have been thoroughly cleaned and sanitized. Ensure machines are thoroughly cleaned and sanitized after each use.
- Dough divider is broken. After repair, ensure dough dividing machine is taken apart and thoroughly cleaned and sanitized before use.
- All dry ingredient/food storage bins are now maintained in sanitary conditions
- High-temperature dishwasher reached 74C at dish surface during rinse cycle

*Note: Ensure clean and dry couche cloths are stored in a manner that is protected from potential contamination by pests.
