Corrective Action(s): Defrost unit again. Manually. Verify that 4 C can be maintained on unit. Supplement sandwiches with ice immediately if made less than 2 hours ago. Discard if longer. Comments

Handsink at prep station now drains OK. Good enough for handwashing and light duties. Discussed temp. logs for cooling units. Still a work in progress. Logs being kept but problems with the coolers persist. Long term solution needed. There is too much use going into display cooler without the use of the prep cooler. Unit may require replacement. Display cooler is frosted up again. Temperture is high.
