- Hand washing station is equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in, large prep, small prep) at < or = 4C
- Freezer (stand-ups, chests) at < or = -18C
- Pizza warmer was not in use at the time of inspection. Ensure it is capable of maintaining foods at 60C or more when it in use.
- High temperature dishwasher is available. Final rinse temperature reached 74.4C at the plate level after three cycles. Ensure the dishwasher is ran at least three times before using it to wash equipment.
- Three compartment sink is available for manual dishwashing
- 100 ppm bleach sanitizer is available in spray bottle. Follow instructions on the manual dishwashing sign to prepare the sanitizer correctly.
- Food is covered and protected from contamination
- No pests observed during inspection
