Observation (CORRECTED DURING INSPECTION): The inside of the 2 ice machines were not maintained in a sanitary condition as mild-dew growth was noted on the ice panels. Ice products were discarded and machines were washed and sanitized at the time of inspection.
1 container of sanitizer had a concentration of 0ppm of Quats. Staff members were noted of changing the sanitizers at the time of inspection. Ensure to monitor the concentration of Quats sanitizer regularly to ensure there is a measured concentration of 200ppm to 400ppm.

Comments

Routine inspection conducted and the following were noted at the time of inspection.
All cooler units less than 4C and equipped with thermometers.
Walk-in freezer at -18C.
High temperature dishwasher achieved a final rinse temperature of 72C at plate level.
All hot foods were kept at a temperature of 60C or above.
Hand washing stations satisfactory.
Quatz dispenser at 200ppm
3 compartment sink satisfactory
All food items stored at least 6 inches off the ground.
General sanitation is satisfactory.
A few fruit flies were noted in the back food preparation area. Ensure to take out garbage frequently and install fruit fly traps if problem persists.
