Note:
- 3 compartment sink removed and replaced with a rinse sink and a high temperature commercial dishwasher. Final rinse temperature registered 74 degrees C at the plate surface during the final rinse cycle.
- Grease trap installed for the rinse sink. Ensure it is properly sized in accordance to the Metro Vancouver Food Sector Grease Interceptor Bylaw.
- Warehouse portion separated using a plastic curtain and used to store plates, cups, utensils, equipment etc.
