Observation (CORRECTED DURING INSPECTION): The QUATS sanitizer pail by the front employee entrance area was measured at ~100 ppm as per inspector's test strip and operator's test strip. QUATS solution was replenished at the time of inspection. Ensure all QUATS solution's concentration is checked throughout the day as per manufacturer's direction.

Observation: An open box of toasted coconut was noted at the bottom most shelf by the walk in freezer.
Corrective Action(s): Ensure any opened boxes of foods are transferred to a food grade container with a tight-fitting lid. Correct this by: April 30, 2021

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: 1. Small pool of standing water was noted by the front area ice caddy.
2. White sugar spill was noted in the back dry storage area.
3. Sticky residue was noted on the dry storage floor by the sugar storage bin.
Corrective Action(s): Clean and sanitize aforementioned areas. Ensure good sanitation is maintained to discourage attracting pest. Correct this by: immediately.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: The French vanilla machine's tray was leaking liquid captured from the machine. The operator cited that the replacement tray has been ordered.
Corrective Action(s): Replace the tray. Any leaked liquid must be promptly cleaned. Correct this by: as soon as replacement part arrives.

Comments

Sanitation
QUATS dispenser dispensed 200 ppm QUATS solution. Test strips available.
High temperature dishwasher's sanitizing cycle was measured at 74.7C.
QUATS sanitizer pails were measured at 200 ppm as per test strips (one exception - refer to the violation section).
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towel.
Ice machine is in sanitary condition.
Except for those areas noted in the violation section, overall sanitation is adequate.
No sign of recent pest activity was present at the time of inspection. Pest control in place - serviced monthly.
3 compartment sink is available for manual dishwashing. Manual dishwashing method was reviewed with the operator.
In-use utensils are replaced every 4 hours or when visibly soiled. No issues noted with in-use utensil storage practice.

Temperature
Coolers (walk in cooler, drink coolers, cream cooler, etc.) were measured at or below 4C.
Freezers were measured at or below -18C.
Hot holding (soup, chili, potato wedges, etc.) were measured at or above 60C.
Temperature log is kept up-to-date.

Food storage
With one exception (see violation section), all foods were adequately covered and labelled.
General storage practice is adequate.
Chemical is stored separately from foods.

*COVID 19 inspection was completed. Separate checklist has been emailed to the operator.
