Observation (CORRECTED DURING INSPECTION): Sanitizer compartment of dishwashing sinks - sanitizer approximately 50 ppm.
Corrective Action(s): Drain and refill sanitizer compartment to provide 200 ppm quaternary ammonia, adequate to sanitize dishware.

Ensure sanitizer is tested throughout the day to verify proper concentration of sanitizer.

Observation (CORRECTED DURING INSPECTION): Handwashing papertowel dispenser at kitchen entrance is empty.

Observation: Beverage cooler has moved outward - metal flashing around cooler has gap between adjacent millwork.
Corrective Action(s): Re-position cooler such that gap between pest proofing flashing of cooler and millwork is closed to exclude pest entry.

Observation: Trace mouse droppings on pony wall behind upright storage unit.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.

Reviewed ambient storage of cooked pizzas: all pizza flavors are individually monitored for a maximum shelf life of 90 minutes post cooking. Monitoring system clearly demonstrated during inspection.
Note: Discussed complaint received from customer that purchased pizza slices the afternoon of January 12, 2020. Customer discovered a hair on one slice of pizza and raised concerns of the contaminated food product. Customer indicated their complaint was not handled to their satisfaction.
Discussed complaint with Manager. Manager was aware and present during the time of complaint. Customer was refunded purchase and offered replacement product. Reviewed foodhandling procedures with Manager. All staff working observed using a form of hair restraint to prevent hair contamination of food.
