Observation (CORRECTED DURING INSPECTION): Front prep cooler temperature was 9 degrees Celsius. No potentially hazardous foods were stored in it.
Correction: Operator will be switching out the prep cooler with the one that is in the hallway (temp. 3 degrees Celsius). Get the other cooler fixed/replaced.
Do not store PHF's in it unless it can maintain a temperature of < or = 4 degrees Celsius.

Notes: - All other Coolers were < or = 4 degrees Celsius
- Freezers were below -18 degrees Celsius
- Dishwasher rinse temperature was 75 degrees Celsius.
- Handsinks were fully equipped / smaller pots have been purchased.
- Menu has been changed. Food Safety & Sanitation procedures have been revised.
- updated floor plan received / cook has FS level 1 Certification.
Before Opening: Ensure that sanitizer bottles are labeled & have at least 100ppm chlorine

* Remove the large orange tub from the back kitchen as discussed. Do not buy equipment/pots, etc that can't be washed in the sink or dishwasher.*

* A handsink has been installed in the front kitchen.*
