Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Prep cooler was 6 C on the bottom and foods on top were 6 and 7 C.
Correction: 1. Transfer foods on the bottom to the walk in cooler.
2. Use ice on the top to keep small portions of food items below 4 C until the unit has been repaired. After food service is complete move items to the walk in cooler. Only use portions that can be used with 2 hours.
3. Have unit repaired, and do not use other than for items stored as above during busiest items of operations.

Correction: Ensure to wash and sanitize can opener after use to remove all food debris.
