Comments

-Hand-washing basins are stocked with hot/cold water, soap, and single-use towels.
- Refrigeration temperatures are ≤4 oC
-Wall in cooler and freezer is organized, all foods are covered and dated.
- Freezer temperatures are ≤-18oC
-Hot-holding temperatures are ≥60o Celsius
-Quaternary-ammonium food-contact surface sanitizer solution available at 200ppm concentration (in spray bottle)
-Bleach solution at low temp dishwasher tested 100 ppm at plate
-Glass washer iodine tested 25
-Valid test strips for all chemicals are available.
-Staff washroom and staff locket area is well maintained
-Accurate thermometers are provided
-Ice machine appears clean and well maintained
** No pest activity observed during inspection- latest pest control report ( Ecolab) is reviewed no major issues noted- ensure to seal noted holes/opening
-Temperature log sheet is available and up to date.
-Facility is well organized and clean- more attention is required for hard to reach areas ( wall behind equipment and floor under equipment)
** Ensure to check and discardfoods that are passed best before date in walk in cooler ( a couple foods noted - gravy which was discarded)
** General sanitation is good however deep cleaning is required for wall tiles and ceiling panels
