Do not use BUSH Orange Red or Lemon Yellow food colouring as it contains a chemical not permitted to be used in Canada.

Observation (CORRECTED DURING INSPECTION): 2 door undercounter cooler (barside, for keg) observed to hold 8°C.

Do not keep food products in this cooler until it can maintain temperatures of 4°C or less.

Observation: 1. *REPEAT* (Since April 2023) Products (sauces in large containers) observed to be uncovered in coolers. Staff stated this was due to cooling overnight; morning shift did not have time to cover.
2. *REPEAT* (Since April 2023) Raw marinated chicken observed to be stored above produce (noodles, cut vegetables)
3. Scoop observed to be stored directly in ice of ice machine.
Corrective Action(s): 1. All products must be covered when in storage. Large containers may not allow product to cool down in time. Use ice wands to assist with cooling.

- under sink of bar
2. Range hood filters observed to be heavily caked with grease and flour. Can potentially be a fire hazard.
Corrective Action(s): Clean all above listed areas.
As issue is repeated, develop a sanitation log to ensure items are being cleaned regularly. Have staff sign off when cleaning is complete daily, weekly or monthly.
