Observation (CORRECTED DURING INSPECTION): High temperature dishwasher not achieving the minimum required temperature of 71'C for final rinse. Facility will follow manual dishwashing method until the dishwasher is repaired.
Corrective Action(s): Have the dishwasher repaired. Ensure all dishware are scrubbed/washed with soap and warm water using the 2 compartment sink by the dishwasher --> soaked in 200ppm chlorine solution in the 2 compartment sink right behind for at least 2 minutes --> air dry (do not use towels).

Observation: Mechanical dishwasher requires a repair. Temperature guages are also broken.

Comments

Routine inspection conducted;

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water throughout.
-Coolers operating at/below required temperature of 4'C; Freezer operating below required temperature of -18'C
-200ppm chlorine solution available in a bucket for disinfection of surfaces.
-Ice machine satisfactory. Scoop stored in proper manner.
-Ventilation canopy hood serviced and maintained.
-Washroom satisfactory.
-Traps in place. No evidence of pest activity observed at this time.

NOTE: Proper cooling method observed at this time. Good.
NOTE: Manual dishwashing poster provided at this time.

General sanitation level of the facility satisfactory, other than areas mentioned above. However, it could still be improved by cleaning hard to reach areas on a more regular basis.

Follow-up inspection will be conducted on/before Friday, October 18, 2019. Please contact the health inspector once the dishwasher is repaired.
