Observation (CORRECTED DURING INSPECTION): Pearls out at room temperature without time stamping. Staff stated it was made at 13:00. The time is now 16:00
Corrective Action(s): Discard pearls. Pearls must only be kept out at room temperature for 2 hours or less before being discarded. This is your final warning before pearls must be hot held at all times.

Observation (CORRECTED DURING INSPECTION):
1) Sanitizer not available at front drink station.
2) Sanitizer brought up from mop sink to drink prep area - no detectable chlorine.
3) Wiping cloth not stored in sanitizer.
Corrective Action(s):
1) Sanitizer must be available at all times.
2) Sanitizer must measure at least 100ppm chlorine. Remake solution.
3) Wiping cloths must be stored in sanitizer when not in use.

2) Ice scoop stored directly in the ice of large ice machine and small ice machine.

1) Store raw eggs below and away from ready to eat foods in case of contamination.
2) Ice scoops must be stored up and out of ice to avoid cross-contamination.
