Routine Inspection
- Hand washing stations equipped with hot/cold running water, liquid soap and paper towels in dispenser.
- Walk-in cooler measured at or below 4C(40F). Line coolers measured at or below 4C. Food stored in inserts measured at or below 4C. Temperature monitoring log kept for all cooling units and observed to be updated.
- 3-Comp sink maintained. Dishware washing standard procedure discussed with staff. QUAT 200 - 400 ppm available.
- QUAT sanitizer available in spray bottles. Ensure all bottles are functional.
- Low-Temp mechanical dishwasher registered at 50-100 ppm chlorine at final rinse water.
- Dry storage kept clean and organized.
- No structural issues observed at this date. Lighting observed to be adequate at this date.
- General sanitation is satisfactory. Floor observed to be clean and free of build-ups. No obvious sign of pest activity observed at this date. Fly control UV lighting noted.
- Mop sink maintained. Chemical storage is organized and sanitary equipment well supplied.
- Staff and customer washrooms observed clean and well maintained. Ensure customer access to the washroom in dining area provided during operating hours.
