Observation: Scoops were being stored directly in dry ingredients, and one scoop had significant amount of flour caked on.
Corrective Action(s): Store scoops in designated scoops holders to prevent handles from potentially contaminating the ingredients, and ensure to wash and sanitize scoops for dry ingredients daily. Alternatively, wash and sanitize all scoops after each use and only use as needed (to ensure scoops are regularly washed and sanitized).

- All hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer solution was available at 200 ppm in several buckets for storing wiping cloths and from the main dispenser
- Dishwasher registered 100 ppm chlorine at plate surface level after final rinse
- Test strips were available for monitoring sanitizer concentration levels
- All coolers were at or below 4C
- All freezers were at or below -18C
- Proper thawing was being done at time of inspection (fish thawing under cold, running water below 4C)
- Hot held items were above 60C
- Temperature records well maintained
- All equipment maintained in sanitary conditions
- Food storage practices satisfactory
- No signs of pest activity noted at time of inspection
- General sanitation is good
