Observation (CORRECTED DURING INSPECTION): Ready to eat food product in insert prep cooler had internal temperatures registering at 8C
Cold potentially hazardous food items stores above 4C cause pathogenic bacteria to grow and spread to the public.
Corrective Action(s): Operator decreased temperature settling on unit and added lids onto the inserts. Volume of food in inserts was also decreased. Food in inserts were moved to under counter unit which registered at 4C. Monitor temperature of inserts such that it maintains at or below 4C.
