- lemon
- candied peels

Some jars are repurposed from pasta sauces.
No food safety plan nor lab tests were submitted for the above items.
Corrective Action(s): CORRECTION ORDER ISSUED - Discard all items. Do not can foods unless a proper food safety plan is submitted and approved.

Comments

General:
- handwashing stations stocked with soap, paper towels and hot and cold running water
- sanitizer measured 200ppm chlorine in spray bottle
- dishwasher reached 72C at final rinse cycle - start logging temperatures for dishwasher

- operator stated he would like to add ham and cheese sandwiches to the menu; this is allowed provided that there are no additional toppings such as, but not limited to, lettuce and tomatoes. Any further advance food preparation may require more food prep equipment
- operator stated a coffee roaster machine has been purchased and will be installed where the old coffee roaster (from previous owner) used to be - ensure compliance with Fire Department and Building Departments

Temperatures:
- upright freezer (back): -17C
- chest freezer (back): -22C
- large under counter cooler (front): 4C
- small under counter cooler (by espresso machine): 3C
- no hot held foods at the time of inspection
- display cases up front are not turned on; no potentially hazardous foods stored at time of inspection
- temperature logs maintained
