Comments

All refrigerator and freezer temperatures meet requirements, dishwasher sanitizing at 84C at the plate surface. Sanitizer available in the kitchen, sushi bar and wait station.
Some damaged bowls (broken edges/chipped/cracked) to be discarded.
Some minor cleaning needed of inside of deep fryer, entrance wall beside dishwasher, around ducting and ceiling (north side of cook line).
Knife rack in sushi bar as well as the open shelving all need a thorough cleaning and sanitizing each day. Knives must be sanitized before each use as well as before putting away on knife rack.
No other problems noted at the time of inspection, keep up the good work!
