Observation: Observation: QUATS sanitizer bucket was at 100ppm and 200ppm is required to properly wash and sanitizer food contact surfaces. Concentrations lower than 200ppm will not effectively remove disease-causing pathogens.

Observation: Observation: The handwashing station in the corner by the walk-in freezer didi not have a liquid soap dispenser. Operator said that they do not use this handsink. However, the kitchen was approved according to having this handsink and as such, it must be stocked so that employees can wash their hands properly and frequently.
Correction: Install the liquid soap dispenser on the wall and ensure that soap and paper towels are always available.

Observation: Observation: Foods in the dry storage room and walk-in cooler were observed uncovered (e.g. no lid or lid not properly on) and therefore not protected from contamination.

Observation: Observation: The kitchen back door was propped open despite a sign saying that it must always be kept closed. the door will serve as an entrance for pests (this includes flies and rodents) that can then contaminate foods with disease-causing pathogens.

Correction: The kitchen back door must remain closed at all times. If air flow is desired, a screen that is securely attached to the door frame may be installed.

Observation: Observation: Various areas of the kitchen were found to be in unsanitary condition, showing debris:
1) The line cook side of the kitchen: underneath stoves, line cook cooler, the server cooler and the ice cream freezer, the exhaust hood --> dust
2) Dust on the underside hinge of the ice machine. These areas will attract pests and/or contaminate foods.

Correction: Clean the above-noted areas. Increase the frequency of cleaning underneath and behind equipment such that debris does not build-up.

Observation: Observation: There were plastic lids used in the baking station on dry ingredients that were cracked (flour, sugar, etc) This is unsafe and unsanitary as pieces of plastic could fall in food and the damaged items cannot be cleaned properly (food accumulates in the cracks). This is a repeat infraction.

Correction: Discard all chipped, cracked, or otherwise damaged plastic food containers and utensils and lids. Purchase new ones and ensure to conduct regular inspections of such items to remove the damaged ones.

Observation: Observation: Various areas of the kitchen show damaged walls/exposed drywall and peeling paint. All surfaces are required to be smooth, durable and cleanable.
Correction: Repair the walls and all areas showing structural damage.

Observation: Observation: A pair of eyeglasses and a personal cellphone were observed sitting on the baking area wooden food contact surface. these items are not required for the operation of the food premises and may contaminate the surface where food is prepared.
