Observation (CORRECTED DURING INSPECTION): - All wet wiping cloth stored on the counters and prep tables
- Sanitizer solution in bottle was measured at greater than 200ppm chlorine residual, test strip was completely bleached out
Corrective Action(s): - Store wiping cloth in sanitizer solution maintained at 200ppm chlorine residual
- Prepare solution by mixing one teaspoon in one litre of water in spray bottle, that is 100ppm chlorine residual sanitizer solution

Observation (CORRECTED DURING INSPECTION): Handsink in back kitchen area was blocked with dustpan. No paper towel available at the handsink
Corrective Action(s): - Remove dustpan and ensure that handsink is available for staff to wash hands
- Immediately replace paper towel and ensure handsink is adequately stocked

Observation (CORRECTED DURING INSPECTION): Employees preparing food were observed just rinsing the hands at prep sink. No soap or paper towel was used
Corrective Action(s): Educated the staff to properly wash hands with liquid soap, rinse and dry hands with paper towel

Observation: - Several boxes and containers of food stored on the floor in walk-in cooler
- One of the compartment of prep sink with food (calamari) being defrosted has drain pipe from walk-in freezer
Corrective Action(s): - Provide extra storage racks inside walk-in cooler to store food items off the floor
- Donot store any food items in one compartment of two compartment sink for defrosting food. Remove the drain pipe so that it does not drain condensed water in the prep sink
