Observation (CORRECTED DURING INSPECTION): Sanitizer solution was detected to have 50ppm Quats residual.
Corrective Action(s): Solution was changed at time of inspection. 200 ppm Quats detected. Ensure to change solution every 2 hours or sooner if solution becomes visibly cloudy/dirty. Also ensure to fill up the bucket with enough sanitizer solution.

Comments

- All hand washing sinks were properly supplied with hot and cold running water, liquid soap, and paper towels. Note: new paper towel dispenser is on order for front hand sink, as current one is broken.
- Quat sanitizer dispenser dispensed at 200 ppm
- High-temperature dishwasher reached 77C at the dish surface during rinse cycle
- All coolers were measured at 4C or colder. Freezer measured at -21C. Accurate thermometers available.
- All hot-held food items were measured at 60C or hotter
- All equipment maintained in sanitary conditions. General sanitation excellent
- Food storage practices satisfactory. All food stored properly covered and off the floor.
- Dry storage areas satisfactory.
- No signs of pest activity noted at time of inspection.
- Temperature records well maintained and up to date.
