Observation (CORRECTED DURING INSPECTION): Foods observed to be put in large containers for cooling. Operator stated product was at room temperature for 30-40 minutes, but product still measured to be 60°C surface temperature.
**Corrected during inspection** Operator to separate foods into shallow trays for quicker cooling.

Foods must be cooled rapidly. From cooking temperature to 20°C in 2 hours, and from 20°C - 4°C in 4 hours. Consider using shallow pans or ice wands to speed up cooling.
