Routine inspection conducted and the following were noted:
All cooler units less than or equal to 4C and equipped with thermometers.
Freezer units at -18C or less.
Internal temperature of hot held foods were at least 60C.
Daily product within the ice-cream hopper machine was at 4C.
Electronic time tracking system in place for burger condiments and fresh eggs.
Verified cooking temperature of 10:1 red meat. Internal temperature was above 71C. Cooking temperatures for red meat and chicken products are verified daily with probed thermometer.
Facility has a monthly contract with pest company. Review the pest report from Oct 2019. No rodent or cockroach activity was noted.
All food items stored at least 6 inches off the ground.
Food items properly covered.
General sanitation satisfactory; however, more frequently cleaning is need in some of the hard to reach areas as there was a build up of food products.
3 compartment sink satisfactory.
Quats dispenser at 200ppm. Quats test strips available.
Low temperature dishwasher achieved a final rinse concentration of 100ppm chlorine. Chlorine test strips available.
