Follow up inspection: -Two probe thermometers were available on-site. -Person in Charge mentioned that they found a manual probe thermometer on-site yesterday and purchased the digital thermometer. -Temperatures for the following steps were reviewed with the Person in Charge: -Cooking: 74 degrees C (165 degrees F) or higher -Hot-holding: 60 degrees C (140 degrees F) or higher -Cooling: 60 degrees C (140 degrees F) to 20 degrees C (68 degrees F) in 2 hours and 20 degrees C (68 degrees F) to 4 degrees C (40 degrees F) in 4 hours. -Cold holding: 4 degrees C (40 degrees F) or less. -Hot-held pizza and the hot-holding unit were above 60 degrees C (140 degrees F). -Inaccurate thermometer was removed from the pizza cooler and an accurate thermometer was available inside it. The following is still outstanding and requires your attention: 1. Obtain appropriately sized drain plugs so that 100 ppm chlorine sanitizer can be set up and held in third compartment sink; Correct by next Friday (October 27, 2017). In the meanwhile, continue with your method with single use bags below the previous drain plugs to contain the bleach water in the sink. 2. The thermometer inside the prep. cooler in the kitchen was also inaccurate as it was displaying inaccurate freezer temperatures. The Person in Charge removed it and mentioned that they would replace it with an accurate thermometer. Correct within 1 week. Thank you for making improvements.
