Corrective Action(s): Ensure all dented cans around the seal are sent back to the supplier as there may be a compromise in the seal exposing the food to possible contamination. Place to the side and send back to supplier.

Observation: Sanitizer dispenser noted at 400 ppm QUATS. Operator is adding water to lower the concentration to 200 ppm QUATS.
No test strips available for QUATS sanitizer or chlorine sanitizer solutions.
Corrective Action(s): Ensure all chemicals from the dispenser is at the proper concentration - no additional dilution (manually) should be required. Get dispenser serviced and get test strips for QUATS and chlorine to be able to test concentration levels of both Sanitizer spray bottles and Chlorine sanitizer dishwashing solution.

Note:
-Discussed the use of chlorine sanitizer for dishwashing sink and QUATS sanitizer spray bottles for food contact surfaces. Around the front display cooler a sanitizer bucket with a wiping cloth is recommended over a spray bottle. Both sanitizer are satisfactory for the sanitizing step for dishwashing and sanitizing food contact surfaces.
