Observation (CORRECTED DURING INSPECTION): Quats sanitizer solution was measured to be at less than 50 ppm in spray bottle and from main dispensing unit. Dispenser to be fixed (see violation code 308).
Corrective Action(s): Until dispenser is fixed, manually mix sanitizer with water for a solution concentration of 200 ppm. Obtain test strips from sanitizer supplier. Alternatively, mix 1 tsp bleach with 1 litre of water for 200 ppm chlorine solution.

Comments

- All hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Dishwasher dispensed 100 ppm chlorine to dish surface, measured after rinse cycle wash cycle reached 55C.
- All coolers were at 4C or colder
- All freezers at -18C or colder
- No hot holding at time of inspection - lunch service had ended
- Food storage practices good - all food stored off the floor and properly covered
- General sanitation good, all equipment maintained in sanitary conditions
- Pest control in place, no signs of pest activity noted
- Dry storage areas satisfactory
- Temperature records well maintained and up to date
