Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Low temperature dishwasher not equipped with detergent and lines not uptaking detergent or sanitizer. 0ppm gleach detected at final rinse cycle after multiple attempts and primes.
Correction: Operator called repair technician. Operator not to use dishwasher until repaired. Operator to obtain Chlorine test strips and check Chlorine concentration at dishwasher daily. Operator to use paper cups during inoperation of dishwasher. To be Corrected by November 7, 2019.

Follow-up Inspection:
-Dishwasher has bee serviced and stocked with new chemical. Providing 50ppm Chlorine at glass level upon final rinse cycle. Test strips on-site.
