Routine inspection: Retail area 2 door display freezer at -19 degrees C. Retail area bunker type cooler at 4 degrees C. Cake display cooler at 4 degrees C. Self serve stations with baked products provided with single use tissues for dispensing. Cases are clean and maintained in a sanitary manner. Retail area clean and organized. Cake decoration area hand sink provided with liquid soap and paper towels. Hand sink leading into bakery department provided with liquid soap and paper towels. Back ware washing area hand sink provided with liquid soap and paper towels. 200ppm quats dispensed at 3 compartment sink. Test strips available for use. 200ppm quats available for use in labeled spray bottle. Clean in place for all large equipment. Pan washer registers at or above 71 degrees C at the plate surface during the final rinse cycle. Walk in cooler at 4 degrees C. Walk in freezer at -17 degrees C. Back storage area clean and organized. No evidence of pests observed at time of inspection.
