Observation: - Operator has added/installed 4 additional pieces of equipment without approval: dryer (for sprouts), tray sealer, termoformer (packaging machine), sprout growing machine. Note: Equipment was not in use at time of inspection. Operator reported he would like to change the operation of his business (ie. products sold), although had begun to use the equipment or prepare other products yet.
- 2 compartment sink installed adjacent to warewashing sink without prior approval

Corrective Action(s): - Business is currently only has approval to slice and re-package processed meats. Operator was previously informed at consultation inspection (04-May-2017) that proposal to grow sprouts at this premises was not approved. Any equipment (sprout related equipment) not related to the current operation/approval of business must be removed from the premises.
- Operator must submit revised layout plan for review and provide written confirmation that City of Burnaby requirements have been met for the changes to the premises (ie. plumbing). [Correction date: Jan. 30/19]

Comments

- General sanitation of premises and equipment was satisfactory
- Hot and cold running water present
- Liquid soap and paper towel present for handwashing at 2 compartment sink and in staff washroom.
- Bleach sanitizer solution present for sanitizing food contact surfaces. Concentration of solution was 200ppm. Operator has test strips to verify concentration.
- Coolers were operating at acceptable temperatures:
- 2 door sliding door cooler 0C
- 2 door glass door cooler 2C
- 3 door sliding door cooler 2C
- Items currently stored in coolers: packaged mortadella, boxes of sausages.
*2 door stainless cooler not in use at time of inspection. Operator reported it is functional.
- Chest freezer -20C
- No signs of pest activity at the time of the inspection.

Note:
- Operator reported he would like to change the operation of the business, specifically the items being processed. He would like to prepare/assemble packaged salad products. He reported he has not been slicing/packaging meat at this time and only distributing product already packaged by Arctic Meats. Operator to submit written proposal to Fraser Health for review. No changes to operation or premises without prior written approval from Fraser Health.
