Observation: Prep Cooler at 7 to 8 C. Reviewed temp logs and is consistently above 4 C. This poses risk to food.
Corrective Action(s): Remove all Potentially Hazardous foods from below cavity of prep cooler. Limit volumes of food in inserts (mostly sauces) for two hours window of use. discard and replace with fresh insert at two hour max interval for PHF's.
Have unit serviced as discussed. Follow up inspection next week for unit.

Observation: Minor mouse droppings noted in hard to reach areas. Many traps and bait stations in place and mostly in good condition and location. Access points observed blocked off with spray foam. No signs of biting at this insulation. Kwality Pest Control in monthly.
Corrective Action(s): Continue to clean up food at end of day. Look for mouse dropping accumulation locations, clean up and note to Pest Control for action. Continue to implement Integrated Pest Management (IPM) practices.

Comments

Note 1: Smell of sewer gas noted in kitchen, likely from grease trap. Grease trap lid edges covered with duct tape. Last serviced in October according to staff. No smells noted in dining area. Sewer off-gassing is not good for staff to breath. Possible tool (screw) missing to allow tight seal.
**Recommend the grease trap be serviced again. Make sure the lid fits tight to eliminate gas escape. Lid may also need gasket around the edges to ensure tight seal. Duct tape is not adequate to block off gassing.
Note 2: Handsink hot tap is not working. Fix so there is hot water available at handsink in kitchen.

All other cooling units ok. Use these more until prep cooler is fixed.
Hot holding is good. Above 60 C.
Sanitizer at 200 ppm (at auto feed at sinks).

General organization is good and record keeping very good.
