Observation (CORRECTED DURING INSPECTION): Items run through the dishwasher were not being properly sanitized.
Corrective Action(s): One of the sinks next to the dishwasher was filled with a 200 ppm Quats solution. This will be used as a sanitizer after dishes were run through the dishwasher as a temporary measure until it is repaired.

Observation: The low temperature dishwasher is not working properly. When tested, it has 0 ppm chlorine at the plate level at 43 degrees Celsius.

Comments

-Check dishwasher chlorine levels on the temperature logs instead of the wash temperature.
-Follow up inspection required for the dishwasher.

All coolers were < 4 C.
All freezers were < -18 C.
Hand sinks were supplied with hot and cold water, soap and paper towels.
The ice machine was clean.
Both kitchen staff were FoodSafe Level 1 certified.
No evidence of pests.
Quats sanitizer was measured at 200 ppm at the dispenser.
General sanitation was satisfactory.
