Observation: Permit was not posted in a conspicuous location of the food service establishment. Staff informed the frame had broken. Permit to operate was available on-site on a clipboard in the office area.
Corrective Action(s): Ensure to post the permit to operate in a conspicuous area of the food service establishment; Correct within 1 month.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings (pest activity) was evident on the floor below both dry storage shelving units, on the floor behind the dry storage bins and on storage cabinets in the front area.
Corrective Action(s): Monitor for signs of pest activity and sanitize all affected areas every day. Continue with a professional pest control program to re-service mechanical traps and remove dead rodents. Provide district Environmental Health Officer with a copy of your most recent pest control report this month. Seal all possible entry points. Continue keeping food covered in storage areas and keeping the food premises in a clean condition.

Observation: Rodent droppings were present below both shelving units, floor behind the dry storage containers, and front cabinets.
Corrective Action(s): Staff cleaned and sanitized the front cabinets to remove rodent droppings during the inspection. Clean and sanitize the remaining affected areas to remove rodent droppings; Correct today.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Walk-in-freezer was at 0.3 degrees C. Staff informed a technician is scheduled to repair/re-service it tomorrow.

2. Light cover in the walk-in-cooler is broken in one area. Staff informed that a new replacement light cover is on order.
Corrective Action(s): 1. Ensure the walk-in-freezer is maintained at or below -18 degrees C; Correct by November 22, 2022.

2. Replace the light cover in the walk-in-cooler with an intact shatter-resistant light cover; Correct as soon as possible within 3 months.

Comments

Handsink was properly supplied with liquid soap, hot and cold running water, and single-use paper towels.
Staff were observed washing their hands properly during the inspection.
3-compartment sink was supplied with hot and cold running water and it was equipped with sink plugs.
100 ppm chlorine sanitizer was available in the third compartment sink and both labelled sanitizer pails.
Refrigeration units containing cold potentially hazardous food were at or below 4 degrees C:
-Walk-in-cooler was at 1.9 degrees C.
-Prep. cooler was at 1.7 degrees C in the upper component and 2.3 degrees C in the lower component.
Refrigeration units were equipped with thermometers.
Under-the-counter fries freezer was at -14 degrees C (should be at or below -18 degrees C).
Hot-held food (chicken, gravy, mashed potatoes) were at or above 60 degrees C internal temperature.
Dry food was covered in storage areas.
Raw chicken was stored separately from ready-to-eat food inside the walk-in-cooler.
Front and back door were closed between use.
Staff member on shift had valid FOODSAFE Level 1 course training (expiration date: July 17, 2024).
