Observation:
Food and grease accumulated on door handles of equipment; vent covers of freezers and coolers; and on stainless steel shelves in the back food preparation area. Food and grease will attract pests.
Corrective Action(s):
Wash the mentioned areas today, and every night before going home, with hot water and soap. Then spray with bleach sanitizer to kill germs.

Observation:
Plastic, protective cover still found on stainless steel shelves and equipment. This coating is NOT cleanable. Food and grease are accumulating and will attract pests.
Corrective Action(s):
Peel off all the protective cover on shelves and equipment today. This will expose the stainless steel material that is durable, cleanable, and sealed.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -18C or colder; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor.
- No expired foods in use or for sale. FIFO rules being followed.
- FoodSafe certified staff present. Expiration of manager's certificate occurs in 2023 (Rahim Ansari).
- General sanitation level is good, other than the mentioned areas.
- 3-compartment sink dishwashing method being done. Bleach present for sanitizing.
- No signs of pests.
- All equipment in good working order, smooth, sealed, durable, and cleanable. This is one prep cooler and one freezer unit not in use at the moment.
