Observation (CORRECTED DURING INSPECTION): Sanitizing pail in expo line and bar area observed at 50 ppm QUATS residual.
Corrective Action(s): Sanitizing pails replaced at time of inspection. Ensure that all sanitizing pails are routinely changed (e.g. every 2 hours) - adequate sanitizer concentrations are required to remove pathogens from food contact surfaces.

Comments

Routine inspection conducted. Facility observed in excellent sanitary condition. The following was noted:

1. Control of TCSS Products

A. BACK OF HOUSE
- All line coolers (underneath ovens) measured at 4C or less
- Line freezers ranged from -13C to -18C
- Stand-up stainless steel freezer at -15C
- Walk-in cooler at 2C
- Walk-in freezer at -18C
- Small sandwich prep cooler originally at 6C (top). After lid was closed, items inside the top portion of the cooler was maintained at 4C.
- Large sandwich prep cooler 4C or less (top + bottom). Top unit originally at 5-6C due to staff members opening the lid - it is essential that the lid remain closed when not in use
- Hot-held items inside the inserts (except for shelf-stable cream cheese icing) maintained at 60C or greater. No double stacking observed (see violation code above for the cream cheeses)

*NOTE: Manager has decided to place individual lids on each insert in the cooler to help retain temperature when the lid is opened*

B. EXPO LINE
- Undercounter prep cooler (centre) at 4C or less
- Undercounter salad prep cooler maintains at 4C
- Ice cream freezers range from -13C to -18C
- Soup hot-holders at 60C or above

C. FRONT OF HOUSE
- Keg cooler at 4C
- Undercounter beverage coolers all at 4C or less

Thermometers equipped on each cooler / freezer unit
Temperature logs were maintained and up-to-date

2. Hygiene and Sanitizing
- Hand wash stations located in all 3 cook lines all stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizing pail at back-of-house at 200 ppm QUATS residual
- Low-temperature dishwasher well maintained and dispenses 100 ppm chlorine residual at the plate. Test strips shown to Environmental Health Officer at time of inspection - good
- 2-compartment sink next to dishwasher well maintained. Sanitizer dispenser inside releases 200 ppm QUATS, test strips available for use
- Tomato slicer, pancake presser, onion cutter stored on upper shelving in good sanitary condition
- Interior of ice machine, scoop, and holster maintained in good sanitary condition
- Restrooms is generally well maintained. Cleaning schedule present and up-to-date

3. Storage
- All raw ingredients stored underneath cooked and ready-to-eat items - excellent
- Noticeable improvement in organization of all coolers and freezer units
- All food products are elevated at least 6" off the floor
- Chemicals stored separately from any food items or equipment
- Ice cream scoops stored inside dipper wells

4. Pest Control
- No evidence of recent, visible pest activity was noted during the inspection
- Professional pest control company conducts routine monitoring. Last inspection by the company was on November 4, 2019. Fruit flies were treated and no rodents were identified in the report
- Mechanical traps opened did not contain any rodents at time of inspection

5. Administrative
- General manager has ADVANCED.FST 3rd edition (expiry: October 2021)
