302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
The quats sanitizer in spray bottles was below 200ppm, and cloth towels are being stored on counter tops. Low strength sanitizer will not kill germs, and cloth towels will allow germs to grow on it.
Corrective Action(s):
Immediately change all the sanitizer in spray bottles with new sanitizer solution. A new solution must be used each day.
Immediately place all cloth towels into a bucket of sanitizer when not in use. Change the sanitizer solution every 2-4 hours with new solution. The towels must be fully submerged in the sanitizer.
During the inspection, new sanitizer was placed in spray bottles and cloths were placed in buckets of sanitizer.

209 - Food not protected from contamination [s. 12(a)]
Observation:
1) Staff food is being stored beside or with store foods in the deli walk-in-cooler. There is a potential that staff food may contaminate store foods.
2) Ready to eat (RTE) foods (baked goods), in the deli/meat walk-in-freezer, were being stored beside or beneath raw proteins. This is unsafe as raw juices (if freezer breaks down) may drip onto the RTE foods
Corrective Action(s):
1) Re-arrange the cooler so staff food have a designated shelf or area to store their food, which is separate and/or away from store food. Put a sign on the shelf indicating where staff shall store their foods.
2) Re-arrange the freezer so RTE foods are stored above or separate from raw protein foods.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
Accumulated food and debris was found in various areas of the facility, this will attract pests. The following areas were found to have food and debris:
- underside of the 3-comp. sinks; the legs of the 3-comp. sink; the pipes under the 3-comp. sink; and the wall beneath the 3-comp. sink
- the metal shelving racks, in the main walk-in-cooler, storing the marinating meats; and the floor of the main walk-in-cooler
- the lower shelves/cupboards in the raw meat service area
- the exhaust filters of the exhaust canopy had dust on it
- the floor of the deli/meat walk-in-freezer
Corrective Action(s):
Wash the mentioned areas with hot water and soap, rinse/wipe down with clean hot water, and then spray with sanitizer. Increase the frequency all these areas are cleaned.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
The 3-compartment sink has leaking waste pipes. Water is pooling on the floor and there is a cloth towel tied around the pipe. Pests will be attracted to the pooling water, and the cloth towel is not an acceptable method to stop a leak. In past inspections, the sink and/or the pipes have been found to be leaking. If this continues, replacement of the whole 3-compartment sink unit will be required.
Corrective Action(s):
Remove the cloth towel, and mop up the pooled water. Immediately call a certified plumber to fix or replace the leaking pipes.

Follow Up to "Critical" Violations Noted on Previous Inspections (if applicable): No corrections entered
Comments

A routine inspection was conducted, the following observations were made:
- Coolers below 4C; freezers below -18C; thermomters present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer was 200ppm; and [Cl2] in spray bottle was above 200ppm.
- All foods stored in food grade containers; covered; labeled; date coded; generally stored in groups; and stored 6" off the floor.
- No expired foods for sale or in use. FIFO rules being followed.
- Disposable gloves being used correctly. Staff are throwing them away after completing one task and changing to another. Remind staff the they MUST wash their hands with soap and water prior to putting a new pair of gloves on.
- General sanitation level is adequate, but improvement needed in the mentioned areas.
- No signs of pests.
- FoodSafe certified staff present.
- Replacement of the 3-compartment sink unit will be required if future leaks or damage is found during inspections.

**A follow-up inspection will occur on, or after, July 4/19 to ensure all violations have be corrected**
